Healthy & Totally Tasty Homemade Chicken Vegetable Soup

This is the go to soup when the weather starts to get cold outside and you want to feel warm and huggy on the inside. This one really checks all of the boxes for us.

I'm lucky because everyone in our family likes to eat soup. So when I serve it for dinner I get zero complaints that they are getting yet another soup to eat this week.

This healthy homemade chicken vegetable soup is a current favorite in rotation.

And as everyone knows...chicken soup is good for the soul and great when you aren't feeling too well with a cold or flu. Whenever someone is feeling a bit under the weather in our home, this soup is in the pot STAT. 

It’s brimming with tender chicken and chock full of good for you veggies for a filling and satisfying dinner (or lunch). 

I have to admit...its super easy to make and has so much flavor that you really don't realize how many vegetables you are eating in every bit.

This homemade chicken vegetable soup recipe is perfect for a comforting and nutritious meal. Made with diced chicken, fresh vegetables, and aromatic herbs, this soup is easy to make and packed with flavor. Whether you're looking for a quick weeknight dinner or a cozy weekend meal, this hearty soup is sure to hit the spot.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced

  • 6 cups chicken broth

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 2 medium carrots, sliced

  • 2 stalks celery, sliced

  • 1 zucchini, sliced then cut into half rounds

  • ½ pkg of sliced mushrooms

  • 1 bell pepper, diced

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 bay leaf

  • 1 tsp low-sodium soy sauce

Directions

  1. In a large pot or Dutch oven, heat some olive oil over medium heat. Add the onion and garlic, and sauté until they are softened and fragrant.

  2. Add the diced chicken to the pot and cook until browned on all sides.

  3. Add the chicken broth, all vegetables to the pot. Stir to combine.

  4. Add the soy sauce, thyme, oregano, bay leaf, salt, and pepper to the pot. Stir to combine.

  5. Bring the soup to a simmer and let it cook for about 30 minutes, or until the vegetables are tender.

  6. Taste the soup and adjust the seasoning as needed.

  7. Remove the bay leaf from the pot and discard it.

  8. Serve the soup hot, garnished with some chopped fresh parsley or other herbs, if desired.

Recipe Note

Warm up with a hearty bowl of homemade chicken vegetable soup!

Sprinkle with some chopped parsley as a garnish and don't forget to add some croutons on top for crunch.
